Passover was about a month ago. Sandra and I drove to my parents' house in New Jersey for the seder, where I served my homemade Matzah Ball Soup. Some of you know that last year, my matzah balls were tasty but rather tough, almost rubbery. I am happy to report that this year they turned out big and fluffy, while retaining their delicious flavor. I believe the problem last year was that I overworked my matzah balls, packing and re-packing them. This time I gently formed the mixture into a more-or-less round shape, and then let them be. Gentle handling is the key.
